In our Macrobiotic – Mountain Recipe, we study how to make Dried Shiitake broth which has richer in flavour than fresh one. Because sun-drying process draws out the umami flavour from the dried shiitake by breaking down proteins into amino acids and transforms ergosterol to vitamin D.
